2 - 500 gram containers of Ricotta Cheese
1 cup of sugar
1 teaspoon of cinnamon
1 ounce of liqueur (Tia Maria or Frangelico are good choices)
2 semi-sweet chocolate squares, grated
4 ounces of almonds, roasted and grated
25 cannoli shells
Combine ricotta, sugar, cinnamon liqueur and chocolate in a bowl.
Mix well.
Fill cannoli shells with the mixture, using a small spoon or icing dispenser.
Dip the ends in the almonds. Keep the cannoli cool, and enjoy!
1 500 gram container of mascarpone cream cheese
4 eggs, separated
5 tablespoons of sugar
1 & 1/2 cups of cold espresso coffee
2 packages of Italian Lady Finger cookies
1 ounce of liqueur (Tia Maria, Kahlua, Frangelico - your choice)
cocoa or shaved milk chocolate
Separate the egg yolks from the egg whites.
Combine the egg yolks with sugar and beat until creamy smooth.
Add the mascarpone cream cheese. Mix well.
In a separate bowl, beat the egg whites until firm and fluffy.
Fold the beaten egg whites into the Mascarpone mixture.
Combine the coffee and liqueur in a separate bowl.
Dip the Lady Fingers one-at-a-time in the coffee mixture.
Cover the bottom of a 9 X 12 pan with one layer of the dipped lady fingers.
Top with half of the mascarpone mixture.
Repeat another layer of Lady Fingers topping with the remainder of the mascarpone mixture.
Top with sprinkled cocoa or shaved chocolate.
Refrigerate overnight before serving.
6 eggs
1 cup of sugar
1 lemon rind (or 2 teaspoons of lemon juice)
1/2 cup of vegetable oil
6 teaspoons of baking powder
2 cups of flour
1/2 cup of chocolate chips (or almonds)
Mix all the ingredients together. The dough will feel kind of soft.
Divide the dough into 2 sections on a baking sheet.
Bake at 350 degrees Fahrenheit until browned.
Remove from the oven and cut into biscuits.
Turn the biscuits on their sides and bake them again until browned.
3/4 cup of flour
3/4 cup of sugar
1/4 teaspoon of salt
1/4 cup of sour cocoa
1/2 cup of soft butter (or margarine)
2 eggs
1 teaspoon of vanilla
1/3 cup nuts (if desired, but Pina prefers none!)
Preheat your oven to 350 degrees Fahrenheit.
Grease one 9 X 9 cake pan.
Mix the flour, sugar, salt and cocoa in a small bowl.
Beat the butter with a spoon until soft and creamy in a larger bowl.
Add the flour mixture, eggs, vanilla (and nuts, if you like) to the beaten butter.
Beat until everything is mixed well.
Pour the mixture into the 9 X 9 pan.
Bake 20 - 25 minutes.
Top with your favourite icing, and enjoy!
